How to Make the Perfect Weekend Brunch Casserole
Planning to host a large weekend gathering and aren’t sure what food(s) to serve? Well, that’s where we come in!
It’s always helpful to have a few recipes on hand which are easy to make and sure to please – especially when you’re planning to host a weekend brunch.
Consider this easy weekend brunch casserole recipe, which can easily be modified depending on how many you need to serve (this recipe serves 12).

Directions:
- Pre-heat the oven to 350 degrees.
- Heat a large pan or Dutch oven with olive oil until hot. Add the onions, garlic, jalapeño and red pepper, and sauté until tender.
- In a bowl, mix the eggs, butter, sour cream, milk, mustard, salt, oregano and green onions and stir well.
- Pour into a greased 9×13 inch casserole dish, and bake for 25 minutes.
- Remove from the oven, and sprinkle with the Pepper Jack cheese before baking for another 10-15 minutes (or until puffy and just turning brown).
- Cool for 5 minutes, and sprinkle the queso fresco just before serving.
Remember to keep brunches simple – a few platters of sliced fruit, baked muffins (right from the oven, of course), a side of bacon or sausage and this simple egg casserole are more than enough to feed a crowd!
